 About The Bistro


George Skiadas grew up in the food business through his dad who worked in a few of those famously delicious New Jersey diners before finally owning his own. George learned about quality food at a young age.
 
After a stint in the army in the early 1960s with the 82nd Airborne, George found his way to Owensboro in 1965 to attend Kentucky Wesleyan College. Leaving KWC before completing his degree, he found himself in a variety of jobs back in New Jersey before rediscovering the food business with two wonderfully wacky and brilliant uncles.  George’s education in the restaurant business with quality food and service continued.
 
Wanting his own place, George opened a small shop, Famous Pizza, in Pennsylvania, working twelve-hour days, six days a week, utilizing the skills he’d learned from his dad and uncles. George then opened two more bustlings, thriving restaurants in the Philadelphia area. 
 
When all was running well, one of those magical twists of fate occurred. George decided to return to KWC to finish his college degree. While there, he met Nancy, also attending KWC. As a side note, an English professor worked diligently trying to fix them up. He was successful. George decided to stay another semester, then another year. The fates intervened, and George and Nancy married, and George put down permanent roots in Owensboro.
 
Eventually, the restaurant business beckoned George again, so he decided to open Famous Deli for breakfast and lunch. As it turns out, awakening at 5:00 a.m. to open for breakfast was not in his genetic makeup. He changed the restaurant to Famous Bistro, opening for lunch and dinner. George was a much happier human.
 
George and Nancy’s son, Ben, began in the food business at age ten putting pizza boxes together for a nickel a box. Ben, who’s quite clever, figured out that he would be better utilized in a different position. Ben has grown up in the food business just as his dad had and has worked every job imaginable. He just wanted more than a nickel a box. Smart guy.
 
Also like his dad, Ben went off to college and found himself working in restaurants to supplement his income. He worked in wonderful restaurants and continued both his college and food industry educations.
 
That wonderful twist of fate occurred again, and Ben found his way back to the home front, and he brought his skills to Famous Bistro, making delightful changes.
 
After a few years back home, an opportunity arose to open another restaurant, so George and Ben put their heads together and opened Lure Seafood and Grille in the downtown Hampton Inn and Suites, another award-winning restaurant.
 
The Skiadas family has had a wonderful, colorful history in the restaurant business and is dedicated to offering our best to Owensboro. We are mighty proud to serve our community.

About George


George Skiadas has been a restaurateur for over 45 years. He often says that his restaurants are more than a way to make a living, but instead a way of life. You can feel his passion for food when you step into any of his high-end dining rooms where you will be greeted with an inviting atmosphere and unsurpassed hospitality. 

About Chef Jared Bradley


Jared Bradley is Executive Chef and General manager at The Famous Bistro.

Chef Jared Bradley, before joining The Famous Bistro in 2012, has cooked for years in kitchens that only work with the best ingredients available to create amazing dishes inspired from his varied food history. Jared specializes in scratch made food and has made a point in his career to NOT be known for a certain dish, but to be known for always making the best food possible.  

He and his team of culinarians have continued the great reputation of The Famous Bistro while putting a newer modern touch on some of the great classic dishes from The Famous Bistro and beyond!

Jared studied Business Management BS at Marshall University, Huntington WV, before going to Mountwest Culinary School, Huntington WV, for his Culinary Arts BA training.
